Craig Sims cooks Southern soul food and plays hip-hop. Most people do one or the other. He does both, usually at the same event, which is where the name comes from — the one's and two's are the turntables, and the grillz are exactly what they sound like.

The point of doing both isn't novelty, it's timing. When the person running the kitchen is also the person reading the room, the food comes out when people are ready to eat it, and the music turns over when they're done. Hire a caterer and a DJ separately and that coordination becomes the client's problem.

What he's actually after is simpler than any of that. He wants a room full of people eating something good, with something good playing, in a decent mood. That's the whole job.
